How To Make The Perfect Dalgona Blue Matcha

Dalgona coffee is amazing, but what if you don't drink coffee? Or, what if you are just avoiding instant coffee? 


Well... check out this beautiful alternative made with Butterfly Pea Flower Powder (Blue Matcha).


The reason Dalgona Coffee is made with instant coffee is because instant coffee contains gluten, which helps create the structured foam that has made the drink famous. 


In this version, we use aquafaba to create the whipped peaks. No gluten! Plus, it's vegan, so depending on which kind of milk you choose, this recipe can be made completely plant based.


Dalgona Blue Matcha

Ingredients

Preparation

Step 1

In a small bowl, add two tablespoons of aquafaba and whip it with an electric whisk until soft peaks form.

Step 2

Add powdered sugar, Butterfly Pea Powder, and almond or vanilla extract. Whisk for another 3-4 minutes, until firm peaks form.

Step 3

Fill two serving glasses with milk, and add the blue creamy foam on top, one teaspoon at a time. Dust with Butterfly Pea Powder.
