Butterfly Pea Flower Pancakes
1. Blend all ingredients except the butter in a high speed blender.
2. Using medium-high heat, coat a pan with butter or coconut oil. Add about 3 tablespoons of batter per pancake.
3. Serve with your favorite toppings. Here we used fresh mint, blueberries, raspberries, cranberries, toasted coconut, and nut butter.
