Gluten-Free Galaxy Donuts

Ingredients
Donuts:
- 1½ cups gluten-free flour mix
- ½ cup coconut sugar
- 1 tsp baking powder
- ¼ tsp salt
- 1 large egg
- ½ cup coconut milk
- ½ cup olive oil
Glaze:
- ⅓ cup full-fat coconut milk
- 3 cups powdered sweetener
- 1 tsp Ancient Choice Dragon Fruit Powder
- 1 tsp Ancient Choice Butterfly Pea Flower Powder
- 1 tsp Ancient Choice Black Raspberry Powder or Ancient Choice Wild Blueberry Powder

Preparation
Step 1 - Get Ready
Pre-heat the oven to 350°F / 175°C.
In a bowl, whisk together the dry ingredients until well combined.

Step 2 - Mix Until Smooth
Add the egg, coconut milk, and olive oil and mix until the batter is smooth.

Step 3 - Let's Bake
Transfer the batter to a piping bag fitted with a round tip and pipe it into a greased donut pan.
Bake for 20 mins. Then remove from the oven and cool on a wire rack.

Step 4 - Make The Glaze
In a bowl, whisk together the powdered sweetener and coconut milk until smooth. If the glaze is too thick, add a bit more milk.
Divide the batter into three bowls, and add Ancient Choice Dragon Fruit Powder, Ancient Choice Butterfly Pea Powder, and Ancient Choice Wild Blueberry Powder separately.

Step 5 - Create The Swirl
Dollop the three colored glazes into a larger bowl and gently swirl with a spoon to create a marbled pattern. Do not overmix.

Step 6 - Dip & Decorate
Dip the donuts into the swirled glaze and decorate with sprinkles on top.
Let the glaze set for about 20 mins before serving.
