Ingredients
Base
- ¾ cup almond meal
- ⅓ cup butter
- 1 tbsp sugar
- 2 tsp Ancient Choice Dragon Fruit Powder
Filling
- 8 oz cream cheese (warmed to room temperature)
- 1 egg
- ½ cup powdered sugar
- 1 tsp Ancient Choice Dragon Fruit Powder
Preparation
Step 1 - Preheat & Prep
Preheat oven to 350°F. Gather your ingredients and line a muffin pan with 6 liners.
Step 2 - Create The Base
Combine all ingredients for the base in a small bowl. Use a fork to mix until you have a consistent, crumbly texture.
Step 3 - Bake The Crust
Press a heaping tablespoon of crust mixture into each liner. Bake for 5 minutes, then let it cool.
Step 4 - Cheesecake Filling
Meanwhile, prepare the cheesecake layer. Whisk all the filling ingredients in a bowl, except Dragon Fruit Powder. It will take about 1 minute to get a smooth and creamy mixture.
Step 5 - Pink It Up
