Homemade Dragon Fruit Bounty Bars [Vegan, Paleo, Gluten-Free]

Mounds Bars were always one of those candies that divided a crowd. You either loved them or... not so much. 


If you happen to be a fan of chocolate and coconut, things get even better in this recipe with the addition of red dragon fruit powder. Homemade wins again!

Dragon Fruit Bounty Bars

Ingredients


  • 3 cups shredded coconut
  • 8 oz condensed milk (coconut or regular)
  • 2 Tbsp coconut milk powder
  • 2 Tbsp coconut oil
  • 2 Tbsp Ancient Choice Organic Dragon Fruit Powder
  • 5 oz chocolate for coating

Preparation

Step 1

Gather all of the filling ingredients and place into a bowl. Save a little coconut flakes and dragon fruit powder for the end.

Step 2

Mix all of ingredients until you get a thick, pink paste that holds it's shape.

Step 3

Form bars with your hands. You can moisten them a little, so the dough doesn't stick. Place the dragon fruit bars on a parchment paper lined tray before putting them into the freezer for about 1-2 hours.

Step 4

Mix 1 teaspoon coconut flakes with ⅓ teaspoon Dragon Fruit Powder to make the topping.

Step 5

After your bars are frozen properly, melt the chocolate and dip your bars in chocolate using a fork. 


Use the stove top, placing a heatproof bowl over a small saucepan filled with simmering water. Stir chocolate until melted.


Alternatively. you can microwave it on medium power for 15 seconds, stir, then repeat, until the chocolate has melted completely.

Step 6

Let the chocolate drip before you place them on a rack or parchment paper. Sprinkle with prepared topping.

    These are oh so very pretty! Would dairy milk powder (dry skim milk) be a good substitute for the coconut milk powder?
