When you want to use strawberries as an ingredient, freeze-dried strawberries are simply the best. Freeze-dried foods retain nearly all of their original flavor, color, and nutrients. Plus, freeze-dried strawberries are shelf stable for years, sometimes decades. That means you can have fresh strawberries in the middle of winter, even if that winter is years from now.

Preparation

Step 1 - Simmer & Whisk

In a saucepan, simmer milk until first bubbles form. Remove pot from heat. In a separate bowl, whisk the egg, sweetener, and starch.

Step 2 - Mash The Bananas

Mash bananas with a fork or use a food processor.

Step 3 - Just Whisk

Whisking constantly, slowly whisk in the hot milk.

Step 4 - Thicken It Up

Pour the mixture back into the pot and add mashed bananas. Return pot to medium-low heat and gently cook until mixture is thick.

Step 5 - Strain The Mixture

Strain through a fine-mesh sieve into a bowl.

Step 6 - Berry Goodness

Mix in the organic strawberry powder. Cool to room temperature.

Step 7 - Let's Whip

Whip the cream.

Step 8 - Mix It In

Mix the whipped cream into the cooled strawberry powder mixture.

Step 9 - Ice Cream Magic

Process the strawberry powder custard in an ice cream machine. If you don't have one, freeze it flat in a large zip-top bag. Then break it into chunks to fit inside your food processor. Pulse until smooth and freeze again.

Step 10 - Serve, Sprinkle & Enjoy

Serve the strawberry powder ice cream in a small bowl. Garnish with sprinkled strawberry powder and toppings of your choice.
